Alpine Cuisine by Richard Rauch
Since 2019, Alpine Cuisine by Richard Rauch has been a year-round staple of the culinary landscape here in the Schladming-Dachstein region. This unique culinary concept blends tradition with modern touches. In collaboration with 16 chefs from the region, award-winning chef Richard Rauch has developed a menu that combines regional ingredients with creative ideas. Dishes such as chicken thighs marinated in stone-pine buttermilk or crème brûlée refined with meadow herbs show just how versatile the interpretations of Alpine Cuisine can be.
During winter season, guests can experience Alpine Cuisine for themselves at 16 participating mountain huts across the region. After active hours spent conquering the slopes, the culinary variety awaiting at these huts promises a very special refreshment break. Anyone stopping in at one of these huts can look forward to high-quality, regionally inspired dishes – rounding out a magical winter day with a one-of-a-kind culinary experience.
Schladming-Dachstein is consistently pursuing its goal of evolving into one of Austria’s premier culinary destinations. Alpine Cuisine by Richard Rauch is the region’s central flagship project in this effort.
Genusspartner: Regional collaboration done right
The regional suppliers behind the delicious ingredients used in Alpine Cuisine are known collectively as the “Schladming-Dachstein Genusspartner”: currently made up of 20 farm-direct producers, five small-scale food manufacturers (bakers and butchers), and 45 hospitality and lodging businesses. What unites them all is a shared passion for regional food – whether they produce it, refine it, or serve it up: meat, cheese, yogurt, potatoes, honey, fine distilled spirits, Ennstal-style Steirerkas, and so much more.
The Schladming-Dachstein Genusspartner demonstrate how all players in the value chain can work together to take culinary quality to a whole new level – benefiting not only guests in the region but also their own businesses. Every Genusspartner meets a set of clearly defined quality criteria and is regularly audited by independent inspectors.
